Blueberry Buttermilk Flapjacks with Maple Syrup
Ingredients:
- 1 ¾ cups All-purpose flour
- 3 ½ tbsp. Sugar
- 1 tbsp. Baking powder
- ½ tsp. coarse salt
- 1 ½ cups Buttermilk
- 2 Large eggs
- 1 tsp. Vanilla extract
- 1 tbsp. Butter, melted and extra for skillet and serving
- 2 tbsp. Vegetable oil
- 2 tsp Olive oil
- 1 cup Blueberries, plus extra for garnish
- Dash Maple Syrup, for serving
Directions:
- In a medium bowl, sift together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together buttermilk, eggs, vanilla, 1 tablespoon butter, and 2 tablespoons oil. Add to the flour mixture.
- Gently fold in the blueberries and set the batter aside.
- In your Chef Skillet, heat ½ teaspoon butter and the 2 teaspoons olive oil over medium heat.
- Pour in 1/3 cup batter. Cook until small bubbles form, (+/- 3 minutes), flip and cook until golden brown, +/- another 3 minutes.
- Repeat the process with remaining batter and add butter as needed.
- Stack and serve with butter and syrup and lightly garnish with blueberries. Enjoy!
