Blueberry Buttermilk Flapjacks with Maple Syrup

Ingredients:

  • 1 ¾ cups All-purpose flour
  • 3 ½ tbsp. Sugar
  • 1 tbsp. Baking powder
  • ½ tsp. coarse salt
  • 1 ½ cups Buttermilk
  • 2 Large eggs
  • 1 tsp. Vanilla extract
  • 1 tbsp. Butter, melted and extra for skillet and serving
  • 2 tbsp. Vegetable oil
  • 2 tsp Olive oil
  • 1 cup Blueberries, plus extra for garnish
  • Dash Maple Syrup, for serving

Directions:

  1. In a medium bowl, sift together flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together buttermilk, eggs, vanilla, 1 tablespoon butter, and 2 tablespoons oil. Add to the flour mixture.
  3. Gently fold in the blueberries and set the batter aside.
  4. In your Chef Skillet, heat ½ teaspoon butter and the 2 teaspoons olive oil over medium heat.
  5. Pour in 1/3 cup batter. Cook until small bubbles form, (+/- 3 minutes), flip and cook until golden brown, +/- another 3 minutes.
  6. Repeat the process with remaining batter and add butter as needed.
  7. Stack and serve with butter and syrup and lightly garnish with blueberries. Enjoy!
