Chicken Nachos
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 Tbsp taco seasoning
- 2 Tbsp chili powder
- 1/4 cup olive oil
- Kosher salt, to taste
- 1 (8-oz.) can tomato sauce
- 2 cups hot water
- Several dashes hot sauce
- Good tortilla chips
- Cheddar cheese, freshly grated
Directions:
- Sprinkle both sides of the chicken breasts with taco seasoning and chili powder. Rub the seasonings into the chicken as much as possible.
- Heat the oil in a Chef Round Casserole on the Slimline Gas Braai on medium heat. Cook the chicken breasts on both sides until golden brown and fully cooked (about 4 minutes per side). Remove from the dish and let rest for a few minutes.
- In the Chef Round Casserole, whisk together the tomato sauce, hot water, and several dashes of hot sauce. Bring to a gentle boil, then reduce the heat to low. Taste and adjust seasoning, adding salt if needed.
- Shred the chicken using two forks. Return the shredded chicken to the sauce and toss to coat. If the sauce is too thick, add a little more hot water and let it simmer for a few minutes.
- In the Chef Rectangular Dish, spread out the tortilla chips (Doritos). Spoon the chicken mixture evenly over the chips. Sprinkle the shredded cheese on top.
- Place the dish on the Slimline Gas Braai until the cheese is melted and bubbly.
- Use Chef Oval Ramekin and Chef Round Ramekin for salsa, guacamole, or other toppings. – Enjoy your chicken nachos
